This recipe is great if you make it the night before. Just whip it with a whisk, and pour. I like to use an iron skillet or divide it into two 8" cake pans. When they're done, they taste a little like elephant ears.
New England Puff pancakes.2 large eggs, beaten 1/2 c. flour 1/2 c. milk pinch of salt | 1/4 tsp. nutmeg 3 tbsp. butter Confectioners' sugar for dusting |
* Heat oven to 425. * Mix all ingredients, except butter, in a medium bowl and whisk until mixed. * Melt 1 tbsp. butter, in pans that you want to use, over medium heat. Pour batter into hot pan. While pan is still hot, put in the oven, and bake until golden brown and puffy. (around 10 minutes) Dust with confectioners' sugar, cinnamon sugar, or fruit, and serve immediately.Recipe submitted by: Gram-ma:-) |
