Mexican frito casserole.1-2 pounds of lean ground beef 1-2 cans enchilda sauce (hot to mild) | 1 med size bag of Fritos Grated longhorn cheese (or whatever kind you prefer) |
Cook ground beef, drain off excess grease. Add meat and enchilda sauce in a pan to make a thick sauce. Cook on low heat until meat has the flavor of the sauce. Place casserole dish over oven pan. Add the meat to the bottom making a layer. Add crumbled fritos to make another layer, then top with grated cheese and a few whole fritos for looks. Cook in 350 oven until hot and all cheese is melted. * Serve with extras, like sour cream, hot sauce, and extra fritos. | Recipe submitted by: Rhonda Shaw MN
