English tea cakes.

2 c. dates
2 c. boiling water
5 tsp. soda
1 c. shortening
2 c. white sugar
4 eggs
5 c. flour
1 tbsp.salt
1 qt. buttermilk
3 c. All bran
2 c. bran flakes
1 c. chopped nuts
2 tsp. vanilla

Add soda to boiling water and pour over dates. Let cool. Cream together shortening,
white sugar, eggs. Now add flour and salt alternately with buttermilk. Then add all bran,
bran flakes, nuts and vanilla. Add date mixture last. Bake 20 minutes at 400 in greased
muffin tins. Makes a large batch but can be stored in covered container in refrigerator
up to 6 weeks and baked as needed.

Date loaf.

1 c. chopped dates
1 tbsp. butter
1 c. brown sugar
1/2 tsp. soda
3/4 c. boiling water
1 1/2 c. flour
1 1/2 tsp. baking powder
1 egg
1 tsp. vanilla

Pour boiling water over the first 4 ingredients. Cool, then add the other 4 ingred-
ients. Bake in a small loaf pan at 350 about 45 mnutes. Can be frozen.

Apple muffins

1 1/2 c. sifted flour
1/2 c. sugar
1 tsp. salt
1 3/4 tsp. nutmeg
1 egg, beaten
1/4 c. milk
1/3 c. salad oil
1/2 c. grated apple, firmly
packed
1/4 c. melted oleo
1/2 c. sugar
1 tbsp. cinnamon

Sift first 5 ingredients. Combine egg, milk and oil, add to sifted ingred-
ients. Mix just until moistened. Add grated apple and mix. Fill greased and
floured muffin tins 1/3 full. Bake at 400 degrees for 20 to 25 minutes.
Dip muffin tops, when cool, in melted oleo, then in sugar and cinnamon mix-
ture. Makes about 12 medium muffins.

Banana oat bread.

1 c. flour
1 c. rolled oats
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
3/4 c. sugar
*****
1/4 c. butter or oleo
1 egg
2/3 c. mashed bananas (about
2 medium bananas, mash with
fork)
3 tbsp. sour milk
1/2 c. broken nuts

Sift and measure flour and resift with baking powder, salt, soda. Stir oat-
meal into flour mixture. Cream butter and sugar. Beat egg until light and
stir into creamed mixture. Beat in mashed banana. Stir in milk alternately
with flour in 3 parts. Add nuts. Place batter in a greased 8x4 inch loaf
pan. Bake in 350 degree oven for about 1 hour. Can be baked in tube pan,
1/2 time.
