Teired Cheese Terrine.1 package (8 ounces) cream cheese, softened 1/2 teaspoon hot pepper sauce 1/4 teaspoon salt 1/4 c. finely chopped pistachio nuts | 1/4 c. finely chopped dried cranberries, cherries or raisins 4 slices (7x3 1/2) inches) cheddar cheese, cut in half lengthwise |
* Assorted crackers if desired. Beat together cream cheese, hot pepper sauce and salt in medium mixing bowl. Stir in nuts and cranberries; set aside. Place a 12 x 10 inch sheet of foil on a flat surface. Place 1 half-slice of cheddar in center of foil; cover with 3 level tablespoons of cream cheese mixture. Repeat layers six times; ending with seventh half-slice of cheddar. (Reserve remain- ing half slice for another use.) Pull up foil tightly around cheese. Re- frigerate about 6 hours or up to 2 days or until very firm. To serve, re- move foil, place on platter and cut into 1/4 inch thick slices. Serve with assorted crackers, or party rye bread. |

Garlic bread with nutty brocoli spread.1 box (10 ounce) chopped brocolli 1/4 c. grated Parmesan cheese 1 teaspoon dried basil | 4 ounces cream cheese, softened 1/4 c. chopped walnuts 1 loaf frozen garlic bread |
Preheat oven to 400. Place brocoli, cream cheese,parmesan cheese and basil in mixing bowl, food processor or blender; process until ingredi- ents are mixed (do not over mix). Add walnuts; process 3 to 5 seconds to blend. Split garlic bread lengthwise. Spread broccoli mixture evenly over bread. Bake 10 to 15 minutes or until bread is toasted and broccoli mixture is heated through. Cut bread into bite-sized pieces; serve hot. |

Chicken puffs.2 tbsp butter 1/4 c. flour 1 egg 1/5 c. shredded Swiss cheese 2 c. finely chopped chicken | 1/5 c. finely chopped celery 2 tbsps. chopped pimiento 2 tbsps dry white wine 1/5 c. mayonnaise ***** |
Melt butter in 1/4 c. boiling water. Add flour and dash salt; stir vigorously. Cook and stir till mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add egg and beat vigorously till smooth. Stir in cheese. Drop dough onto greased baking sheet, using 1 level teaspoon dough for each puff. Bake at 400 about 20 minutes. Remove puffs from oven; cool and split. Combine remaining ingredients, 1/2 teas. salt, and dash pepper; fill each puff with 2 teas.
